Snicker-doodle Apple Cookie Bars

When I saw a dessert like this one on Pinterest I had to figure out a way to make it with the sugars I could eat. My first attempt was while my family and I were in Vegas for Thanksgiving. They turned out so delicious!! Everybody ate them and I didn't feel sad about not eating pumpkin pie.

This is my recipe...

Snicker doodle cookies dough

  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 1 and 1/3 cup agave
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3 cups whole wheat flour
  • 2 teaspoons cream of tartar*
  • 1 teaspoon baking soda
  •  2 and 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt

Instructions

1. Preheat oven to 350 degrees
2. Place a thin layer of your cookie dough in the bottom of your 9x9 dish. Bake it for 10 minutes. Pull out and add apple pie filling and the rest of the dough on top. Bake for an additional 10-15 minutes or until golden brown.

Apple pie filling

5 apples
1 c. agave
¼ cup corn starch
1 tsp ground cinnamon
½ tsp ground nutmeg
½ cup water

Pour in all ingredients in sauce pan and bring to a boil. Once the filling is to a thick consistency it is ready!!

Cookie Dough

One of my favorite things about making cookies is eating the dough. I seriously could eat the whole batch.  I bake a tray full of cookies and put the rest of the dough in the fridge or freezer (depending on how fast you think you will use it).

In the summer time I will eat a spoon or two of dough as my treat for the day. Especially on those hot days where you need something sweet but don't want to heat up your house with the oven.

In the cooler months I like to freeze my dough in pre-made balls. As I need a quick treat I pull them out and cook for the 8-10 minutes. This is especially good when your family is eating a sugary treat and you need something fast to keep you from giving in to the dark side!! (LOL)

I know that the experts say that eating raw cookie dough can cause a stomach ache. I do it all of the time and have yet to experience a stomach ache from it. Maybe that means if you eat too much cookie dough, so eat in moderation!!!

Cookies are the best anytime of the year!!! - Melissa

Snickerdoodles

What a funny name to call such yummy cookie. This recipe comes from one of my favorite cook books "The Feel Good Cookbook". - Melissa

1 cup each, butter and honey
1 tsp. vanilla
2 eggs

2 3/4 cup whole wheat flour
2 tsp cream of tarter
1 tsp soda
1/2 tsp salt

Cinnamon Topping:
2 Tbls each: Xylitol and cinnamon

Cream together first group of ingredients. Then mix in next group. You want the dough to not stick to your fingers. Add more flour until at the right consistancy. Form dough into little balls and roll into the cinnamon topping mixture. Bake for 375 for 8-10 minutes. They are best when lightly browned.

Homemade Cream Filled Cakesters

The cake recipe is the same as my cup cake batter. Click on Cake mix and it will take you to that recipe. Still bake at same temp as cake recipe. Then make cupcakes.. the little mini cupcake pans would be cute for these as well. Bake cupcakes 5 minutes and check. Don't over bake!! Since every one's ovens are different you are really going to have to keep a close eye on your first batch. Then, repeat what ever time cooked in. So remember if your toothpick comes out clean, your cake is done. You really only want to put about 1 Tbsp. full of cake batter in your cupcake cups, or smaller amount if using the mini cupcake, then bake.

When cupcake's cool. Cut in half and fill with cream. Put top back on and keep refrigerated. It will taste better after an hour of chilling in the fridge. - Lyndsie

Cream Filling:

1/2 stick of butter

1/4 c. shortening

1/2c. of agave or grind coconut crystals

2 tsp. pure vanilla extract

Add a few drops of mint extract for a mint cakester.

Throw in some homemade chocolate chunks for a double chocolate flavor

or use different flavor stevia extracts like, berry, chocolate raspberry...the sky is the limit on these.

Enjoy!!

No bake cookies

These are so yummy. I decided to make them with an alternative sweetner and they were great. Everytime I make these cookies I think of my little brother Aaron. Back in the day when we still lived with Mom and Dad. We would get home from a long day at school hungry and tired. Looking through all of the cupboards in search of something to munch on. I was one of 7 children in my family. I am sure my parents were constantly trying to keep the cupboards filled with food. After the realization that there was nothing to eat my brother would pull out the pot and all the ingredients for these cookies and in no time we were devouring them. But I must WARN YOU that once you start it is hard to stop!! Honestly it was rare that the cookies made it to the solid consistancy. We would pull out our spoons and eat it off the wax/foiled paper. - Melissa

Bring to a boil
2 c. sucurnat sugar
1/2 c. butter
1/2 c. milk
4 T. coco

1/2 c. peanut butter
1 tsp. vanilla
