Paleo Tacos

I got this recipe from a blog called Stupid Easy Paleo. I really like her blog. Changing your diet can be hard and scary. I usually make it harder than it needs to be so someone showing me an easier way is very appreciated. My family really like these. Ryan's only suggestion was for me to spice them up a little more next time.

Paleo Tortilla Shells
  • 2 eggs
  • 1 teaspoon melted ghee (sub: melted coconut oil)
  • Update: 1 Tablespoon water makes the batter more spreadable / thin
  • 1/4 cup arrowroot powder (I didn't have arrowroot powder so I used cornstarch. It worked great)
  • 1 teaspoon coconut flour
  • Pinch of salt
  • If making crepes for a sweet application, add 1/4 teaspoon vanilla extract

We had filled our tortilla with...

Browned hamburger meat
Diced tomatoes
Grated cheese
Mild salsa
Lettuce/ Spinage

Next time I would like to make a BLT (Bacon, Lettuce and Tomato) in our shells. It would be great for breakfast on the go.

Apple Cinnamon Oatmeal Muffins

I was looking for a good apple muffin recipe and happened upon this one. I made a lot of modifications so I'm just going to claim this one as mine. I loved how I didn't need flour. I thought my family wouldn't like these because they are "too" healthy but they gobbled them up. I wish I doubled the recipe. :)

Makes 15 muffins

3 cups quick oats
1 cup milk (I used 2% but vanilla unsweetened almond milk would be yummy too)
2 eggs
1/2 cup agave
2 tsp. cinnamon
1 Tbsp. baking powder
1 cup diced apples

Mix everything together.  Bake for 10-15 minutes at 350 degrees.

Omelet"licious"

Mix 3 to 4 eggs together in a bowl and dump in pan. Cook until almost done.

Cut up your favorite veggies, cheese and meat (ham, turkey or sausage).

Put ingredients on one side of cooked egg.

Fold egg over the ingredients and let cook for another minute on both sides

We love to put sour cream and salsa on top. I make this all of the time. It is so easy to make and really feeling.

Raspberry Syrup

Here is our, so good.. you might eat the whole thing, raspberry syrup. I have been doing a variety of these now.  My kids squeal for joy (my husband does inwardly :) when I make fruit syrups for our pancakes. And with a BIG scoop full of whip cream it is awesome!

First get 2T. of cold water in a cup. Then add 1Tbsp. of cornstarch. Mix together and put aside. I love anything from Bob's Red Mill. There products are great and always natural.

I used 2 cups of frozen raspberries..this was picked fresh last year from my mother-in-laws garden. It still tasted like we had just picked them off the bush. So good!  You could use fresh or frozen. I just got the both of best worlds..LUCKY :) If you don't like a lot of fruit...I would go with 1 cup. So from there put the fruit in a saucepan, with 1 cup of water. Then use the DUMP METHOD (not a proven method...yet) and dump some agave in..to taste.:)  Bring to a boil. Once it starts boiling pour in cornstarch mixture and stir constantly until thickened. About 1-2 min.  Once thickened turn off heat and remove from burner. I like to pour my syrup in a measuring cup for easy pouring later.

So here are my toppings ready to go. I'm a little bit excited!  For our awesome whipping cream recipe go HERE.

OTHER FRUIT VARIETIES:

PEACH
BLACKBERRY
BLUEBERRY
STRAWBERRY
APPLE CINNAMON-  put apples in a saucepan and cook with 1/4 c. water until tender..then follow recipe as above. adding raisins would be a good option too.
BANANA-  I haven't actually tried this one yet. so if you get to it before me. Leave a comment and tell me how it went. In my head... it's tasting very good. :)
APRICOT
I think you get my drift... the sky's the limit with this one. Have fun with the DUMPING METHOD!

The Best Homemade Granola!!!

This is one of my favorite things to make. Not only does it taste so good. It makes my house smell awesome (NO candles needed) and it's good for you.  I always double this recipe because it goes so fast. I like my kids eating this for breakfast. Breakfast cereals are so expensive and not the healthiest (we do buy cereal). Someday I will be a super mom and have a wonderful breakfast made for my family each morning, but until then having my granola in the pantry will have to suffice. So yummy. Making me hungry.

Mix dry ingred. in a big bowl
7 cups Oats
2 cups Flour (wheat or white)
3/4 cup Sunflower seeds
3/4 cup chopped up mixed nuts from costco or your favorites will do.
1 cup Unsweetened Coconut
1 cup Wheat Germ
1 cup Cornmeal
1 Tbsp. Sesame Seeds
2 Tbsp. Cinnamon

In sauce pan combine until dissolved
1/2 cup Water
1 cup Coconut Oil (your favorite oil will do)
1/2 cup Agava or Honey
1 tsp. Vanilla

I don't always add all of the dry ingredients. I just use what I have.

Combine wet ingredients with the dry. Pour onto baking sheet (2 baking sheets if you double the recipe) and bake at 300 degrees for 1 hour. Stiring every 15 minutes. Let cool.

Ways we like to eat granola...

  • with yogurt
  • with fresh fruit
  • with dried fruit
