No Bake Strawberry Yogurt Pie

We had a big family gathering last week and my cute cousin Jenny brought these pies. She was sweet and made them with sugar-free cool whip. But I still can't have that, I was dying to try her pies the whole day. After thinking about it for awhile I realized that it would be really easy to make a low-glycemic version. Hope you like it. Strawberry Yogurt Filling:
3 C. Whipping Cream
1 32oz. container of Organic Sugar-free yogurt( I like the brand, Cascade Fresh, it's fat free and sweetened with real strawberries and fruit juice. They have other flavors, so just use the one you like best.

Whip the cream in a glass or metal bowl. Put 3 Tbsp. of grounded Xylitol, or agave. 2tsp. of pure vanilla extract, and 1 tsp. cornstarch. Blend until soft peeks are formed.
Then, Add whole 32 oz. container of Yogurt to cream. Stir with a large spoon until incorporated.
then pour into pie shell. Put in Freezer until frozen. When ready to eat take out of freezer and let the pie sit on the counter for 20 min. Then eat and enjoy! This is so refreshing on a hot day! - Lyndsie


Crust:
10 whole organic graham crackers( sweetend with Honey and Fruit Juice) you can buy these at the health food stores.
5 Tbsp. of melted butter

Grind up crackers in food processor. stir in melted butter. blend well. Then press into pie plate.
Bake 400* for 5-6 min.
Let cool.
