A Simple Sweet Cake

My little girl (Elly) turned 7 years old. I can't believe how fast my children are growing. Well, with birthdays comes cake and ice cream. My family eats a lot of no sugar treats but I also want them to have the real stuff. I don't want them to grow up without sugar. It might be healthier but my philosophy  is everything in moderation. After I made Elly's Chocolate cake I made me this simple cake. I was so glad that it turned out so yummy. That chocolate cake was pure torture!! I hope you enjoy it as much as I did! - Melissa

Cake...
1 c. agava
2/3 c. butter
1 egg
1 tsp. vanilla

3 c. flour (whole wheat or white)
3 tsp baking powder
1 tsp salt
1 1/2 c. milk

Mix ingredients well.  Pour into a greased and floured pan. Bake 35- 40  minutes. I put a dollop of freshly whipped whipping cream on top.

Whipping Cream...

So easy!! All you do is take a carton of whipping cream. Pour into a mixing bowl along with agava (to taste) and mix until stiff. It takes about 3 to 5 minutes
