Cafe Rio Salad or Burrito

This is another yummy recipe from "The Feel Good Cookbook". This recipe takes a couple hours to prepare but it is so worth it.

Corn Tortillas (my favorite)
Sweet Lime Cilantro Rice
Black Beans
1 head of Romaine Lettuce, Shredded

Toppings:
1 cup diced tomatoes
Guacamole (optional)

Sweet Lime Cilantro Rice...
1 quart vegetable broth or chicken stock
2 cups brown rice
1 tsp salt
2 Tablespoons each: lime juice, mayo and honey
1 Tablespoon cilantro or parsley

Stir ingredients together in rice cooker, press "on" and in 25 minutes rice is ready and warming until you need it. On stovetop, simmer in covered saucepan 45 minutes or until tender.

Red Spanish Rice...
2 Tablespoons canola oil
2 cups brown rice
1 (15 ounce) can tomato sauce
4 cups water
1 onion, diced
1 garlic clove, crushed
1 tsp salt

Saute rice in oil over high heat, stirring until golden brown and clear looking. Steam all ingredients in rice cooker, or simmer on low for 1 hour resist lifing lid and it will be perfect!

Black Beans...
2 cans black beans, drained
1 cup tomato salsa or stewed tomatoes
1 Tablespoon cumin

Warm and serve.

Guacamole...
1-2 ripe avocados, mashed
1/4 cup salsa with a squeeze of lime or lemon.

Blend and serve.
