Black Bean Soup

Black Bean Soup

2 Tbs. Olive Oil
7-8 Garlic Cloves, roughly chopped
1 Large Onion, diced
5 Carrots, diced
5 Celery, diced
5 cans Black Beans, rinse & drained 
1- 7 oz. can Green Chillies
4-5 Cups Beef Broth 
1 Tsp. Chili Powder
1 1/2 - 2 Tsp Cumin
1 Tsp. Dry Oregano Leaves
2 Bay Leaves
4 Limes
Salt and Pepper to taste

Directions:  Saute Olive Oil, Garlic Cloves, and Onion until caramelized. Saute Carrots and Celery until tender. Add Black Bean, Green Chillies, Beef Broth, Chili Powder, Cumin, Oregano Leaves, Bay Leaves and bring to a boil. Cook until Carrots and Celery are nice and soft.  Remove Bay Leaves.  Then squeeze 2 limes into soup and puree with a handheld blender.  

Finally top with your favorite toppings: Grated Cheese (We love Goat Cheese with this soup), Cilantro, Sour Cream, Tortilla Chips, chopped Cilantro.

This soup is so Yummy!! We make it almost weekly! Hope you enjoy!
