Chocolate/Banana Cream Pie - mmmm!







Our Cute Dad is dealing with Brain Cancer and lately he has dealt with lots of swelling on his brain. The medicine he is taking to make the swelling go down makes him CRAVE sugar more than normal. Unfortunately if he wants the swelling to go down he can't have a lot of sugar and fats. He loves and craves this chocolate pie like crazy. I made this for him a couple of weeks ago and he talks about it everyday. In his own words, he said,"This is great! It tastes like the real deal." Now seeing him go through all the crap that cancer brings, and not being able to do a dang thing for him has been hard. At least I can make some good low- glycemic pies to help those cravings.:) The Banana Cream pie taste just like the real deal too. It's so good! - Lyndsie

5 T. Cornstarch
1/2 c. of Agave or 1c of coconut crystals
1/4 t. Sea Salt
2 1/2 c. Almond(unsweetened) Milk or unsweetened coconut milk
3/4 c. Half and half cream
3 Egg Yokes
2 T. Butter (optional)
1 t. Pure Vanilla Extract
1 c. Whipping Cream (for the top)

Mix Cornstarch, sugar, and salt in a 3 quart pan. Add milk & cream and cook over medium heat until smooth and thick, stirring constantly. Pour small amount of hot mixture into egg yolks, blend well, then pour back into pan. Cook 2 or 3 minutes. Remove from heat and add butter, stevia, and vanilla. When cool pour over bananas in pie shell.
Whipping Cream:
Add 1 tsp vanilla and 3 tbsp. Agave or more to taste.Mix in cream until thick, then mix 1 tsp. cornstarch. (this will help it to keep it's thickness and shape longer.)
Coconut pie - add 1/2 c. unsweeted coconut
Choc. Pie - 1/2 c. Melted Homemade Choc. Chips
