100% Whole Wheat Pie Crust

I love this recipe. This is definitely fool proof. Which is good for me, because I can mess things up pretty easily.:) But so far, this one has been a success every time. Nice and Flaky! Lyndsie
** Half recipe if doing one custard pie. - Lyndsie

2 1/2 c. whole wheat pastry flour
1 c. unsalted butter, very cold, cut up into 1/2 in cubes
1 tsp. salt
4 to 8 Tbsp. of ice water

Cut butter into flour and add rest of ingredients. Add 1 Tbsp. of water at a time, just until Ingredients stick together making a ball. Knead dough enough to form 2 discs. Sprinkle a little flour around the dough. Wrap in plastic wrap and refrigerate for 1 hour or up to 2 days. Remove 1 disc from fridge let sit for 5-10 min. Roll out and put in pie plate. Flute edge. Fill. and cook.

For Custard Pie:
Freeze crust 1/2 hr. Preheat oven 350 degrees. Line w/ aluminum foil or parchment paper fill 2/3rds full of rice or beans. Bake 20 min. remove from oven, Remove pie weights. Poke holes in crust. Bake 10 more min. You may want to wrap edges with aluminum foil to prevent edges from burning.

  1. I had a head injury when I was young, and I didn't know it at the time but this head injury left me with an inability to eat sugar of any kind. Not even fake sugars, processed flour, honey, molasses, or fruits (including tomato's).

    In short I am unable to eat any ingredient with a sweet flavor of any kind in any form with the exception of carrot juice, and whole or partially de-fatted coconut milk (I can not have coconut oil or the butter by itself. For some reason this too is a no go for me). If I ingest any of the above sweets, my brain swells up as if I have had another head injury, I pass out, and I wake up with suicidal depression for many days after. I have met other people with this condition at brain injury meetings so I know I'm not the only one with this problem. I would like to send my thanks to you for offering this website, your personal account of why you can't eat sweets, and for all these wonderful "literally" life saving recipes.

    I'll admit that I have to modify most of your recipes so they don't contain the sweet ingredients that I can't have, but at least they are close enough that I don't have to rewrite the whole recipe which is a huge miracle because these kinds of sweet free recipes are almost impossible to find anywhere.

    This particular recipe for whole wheat pie crust is 100% perfect and contains absolutely no sweets what so ever which is exactly what the Dr. ordered and keeps me from having serious life threatening issues.

    For those who are wondering what would someone like me need a pie crust recipe for: Since I can not eat any sweets, and have not for many years, the natural sweetness in foods is amplified a lot, and therefor I can make things like a Pumpkin Pie using only 100% Pumpkin and a small box of soft tofu mixed together as the filling and to me it tastes really sweet like a pie should taste. However to any one else who tried a piece of my pumpkin pie and who also didn't stop eating sweets all together, it would taste extremely bland. Not to mention the fact that there are a lot of other non sweet pies such as dinner pot pies or other non-sweet pies that I could make with this wonderfully perfect recipe.

    So again, thank you very VERY much for your website and for this recipe. :) You have no idea how much you have helped my by just being a voice on this issue. Thanks.

  2. Wow, Thank you for your response. We felt that our problem was bad. Not anymore. We are so sorry that you have to deal with this. The side effects that you have to endure are so hard. Sugar would definatley be out with no questions if we had your reaction to it. The hard thing is that sugar is in everything so you have to get good at making EVERYTHING! Not an easy task. We know!

    We love working on this website. It modivates us to keep eating healthy and sugar free. We are so interested in your diet and would love to make some treats that are targeted towards you and others that suffer as you do. We will try working with the sweetners (carrot juice, and whole or partially de-fatted coconut milk) you told us you could use. If there is anything else please let us know.
