Chocolate Chip Cookies



1 cup coconut crystals or agave
3/4 cup real butter (room temperature)
2 large egg whites(room temperature)
2 tsp. pure vanilla extract
2 cups homemade chocolate chunks
2 cups whole wheat pastry flour
1/2 cup old-fashioned oats
1tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
Preheat oven to 350 degrees.

In a large mixing bowl beat sugar and butter with a wooden spoon until smooth. Beat in the egg whites and vanilla. Then add chocolate chunks. Add the flour, oats, baking soda, and salt, and mix until thick dough forms.

Drop the dough by the tablespoonful onto a baking sheet, spacing about 2 inches apart. Bake until golden brown and just set, 11 to 13 minutes; do not over bake. Transfer to a rack and cool.
